Vineyards: Small plots of bushed vines of Tempranillo are located in Quintana del Pidio at an altitude of 850m. All works are done following the organic methods in the most natural way, respected low yields on clayey & calcareous soils.
Vinification: The grapes are whole-grain vatted and undergo a pre-fermentative cold maceration to extract aromas and colour. With its own indigenous yeast, to find a differentiation and personality in this wine, alcoholic fermentation begins at controlled temperatures of 25ºC, with gentle and short daily pump-over-the-cap runs, ending with a post fermentation maceration of no more than three days: Malolactic fermentation takes place at 21ºC in tanks and, once completed, the wine is racked into barrels. 6 months in American (80%) and French (20) new oak barrels.
Tasting Notes: Cherry red in colour and medium-high depth with outstanding intensity.
On the nose, Nabal Organic represents the typicality of Tempranillo: fresh blueberry and blackberry aromas. As this wine opens up, it presents notes of wild berries, blueberries, vanilla and clove.
Thanks to the careful selection of the toasted oak, the integration of fruit and spice so characteristic of this wine has been achieved.
The palate is full-bodied, balanced, tasty and ample. Power, fruit and acidity integrated with a firm and rounded tannin. Liveliness and structure make this a wine with great potential.
Food pairing: It goes well with mushrooms and sauced cod dishes, and in general with fish in sauce. Perfect for pastas, an ideal ally for tapas with toasts and assorted skewers. Also red meats such as grilled pork or lamb goes well.
