2019 P.N. (Pinot Noir), Crama Bauer: 100 % Pinot noir, single vineyard: dry red wine: Vintage: 2019: Limited edition : 3000 bottles: 14,5 % Vol. Alc: A really divine variety although very demanding in the vineyard and the cellar. It needs a perfect enviroment (soil, climate condition) and a lot of care to bring out its real potential. Pinot Noir is not for wine drinkers who like a lower acidity, a lot of extract and tannins as well as deep-colored wines. It is a very feminine variety with a lighter yet bright color, fine grained tannins and a crisp, solid acidity which adds to the wine’s structure and juiciness. The key words for a good Pinot Noir are elegance and balance. Thats why we hand pick the grapes for our Pinot Noir from the cooler climate region Târnave in Transilvania. After destemming we ferment the uncrushed grapes in open wooden vats of 1500 litres with indigenous yeasts. During fermentation pigeage is made by careful overpumping the must to obtain only ripe, smooth tannins and to avoid any harsh mechanical extraction. The wine remains at least 6 weeks on skins and after the malolactic fermentation it is aged for at least 15 months in 1000 litres wooden vats where we also do a battonage during the first 6 months. Like all our reds this Pinot Noir will require some patience after bottling to develope and to show its real potential. For those who cannot wait we recommend a double decantation or an aeration in a carafe for at least 1,5 – 2 h
