Wine made with Verdejo grapes from centuries-old vineyards, acquired from local winegrowers who own vineyards between 100-120 years old, very close to us. A select, manual harvest is carried out in boxes of 15 kilos. Subsequently, a very soft pressing is carried out. The must, once cleaned by natural decanting, begins fermentation in 500-liter French barrels with native yeast typical of centuries-old vineyards to acquire greater personality and unique character. After its fermentation in the barrel, its fine lees are bathed for 5 months to obtain greater complexity and volume.
