Production 3500 btts per vintage. Traditional manual harvest in small crates, carefully selecting each grape at time of picking. After a quick pressing to prevent the skins from adding colour to the must, the wine undergoes the alcoholic fermentation in a carefully controlled, oxygen free environment for 11 days at 12 degrees. It then remains on its lees for two months, enhancing volume and richness.

Visually the wine presents a pale, light yellow colour with intense aromas of rose, jasmine and linden flower. Additionally one might detect hints of lychee, strawberry and other citrus fruits.

On the palate the wine has fresh, delicate minerality reflecting the personality of the terroir.

The wine pairs beautifully with Salmon, some cheeses, spicy dishes and white meats. As a pairing with desserts it goes well with some cheescakes.
