2019 S.V.S. Cramer Bauer: 100 % Sauvignonasse, single vineyard: dry white wine: Vintage: 2019: Limited edition : 4000 bottles: 13% vol: Our S.V.S. is made from Sauvignonasse grapes from a very old vineyard (over 60 years). It is also known as Friulano or Sauvignon Vert. Unfortunately, in Romania it is/was very often sold as “Sauvignon” or “Gros Sauvignon”, which may lead to misunderstandings. Organoleptically, these two grape varieties have absolutely nothing to do with each other. We see the Sauvignonasse much more as our “Chablis” because of its rather “mineral” character. Crunchy, crisp and rather spicy mineral than fruity, it is a perfect wine for gastronomy. The grapes for the S.V.S. Are directly pressed and then vinified in 1500 litre vats where the wine is also kept for at least 18 months for aging. During the first 6 months we apply also a battonage to add structure and depth. Sauvignonasse has a very good aging potential (10 years and more are no problem) but also requires a little patience in its youth. Therefore we always recommend for younger vintages either a double decanting or at least 2 hours in a carafe.
